Dinner Time Is Happy Time with Keto

To say that the ketogenic diet has been a life-changer for me would be a complete understatement.

It has removed my cravings, given me more energy, allowed me to focus on my work and of course lose weight.

However, it wasn’t always so easy with keto.

Initially, it was tough because I just wasn’t prepared. I never realized I was a person that can’t eat the same thing over and over again like some people.

I just don’t have it in me.

It wasn’t until I started to vary my meals that I started to see the results that I wanted because I was looking forward to eating again.

Even though I’m not as hungry on the keto diet that doesn’t mean I shouldn’t eat. I have to hit my macros!

So this means I need to prepare meals that I look forward to eating and because there are so many keto recipes out there, my options were pretty much endless.

23 Delicious Keto Dinners for You to Enjoy

In this post, I want to share some of my favorite keto dinners.

It’s important to remember that these meals usually create around 4-6 servings meaning that often you can have leftovers for lunch or dinner the next day. Eating keto doesn’t mean you need to be in the kitchen cooking every single night.

Sesame Chicken

I love Asian-inspired food of all types. One of the hardest things about keto, for me, was having to give up rice and Asian noodles.

However, that didn’t mean I had to give up Asian flavors and this dish helps give me the Asian-taste I’m looking for whenever I’m craving it.

I also love the fact that the way you season the chicken gives it some flavor. A lot of diets utilize chicken a lot but it’s usually plain.

Nobody wants plain chicken.

I feel that no matter what your diet is you need to have a casserole or two in your reserves. With keto, there are a ton of casseroles for you to try so you could probably go a whole month of eating casseroles if you wanted to.

What’s good about a meal like this is that there is no need for sides. Everything is right there for you which is important because you can get all of your macros on a single plate.

Crockpot Buffalo Chicken

Buffalo chicken is usually associated with wings but it’s important to keep in mind that buffalo is merely a flavor not a food.

Unless we are talking about actual buffalo then things get weird and confusing because you can eat actual buffalo but the buffalo flavor we are talking about is named after the city of Buffalo in New York.

Oven Baked Chicken Cordon Bleu

The first time I ever had chicken cordon bleu was from a microwave dinner.

You don’t really appreciate it when it comes in that form.

Then one day my wife made it and wow! Chicken cordon bleu is some quality food. Now I try to have it once a month because it’s a perfect keto dinner. Mix in with a side of roasted cauliflower and I’m good to go.

Broccoli Chicken Zucchini Boats

I wrote an article the other day on keto vegetables and I had this to say about zucchini:

I’ll admit that I didn’t know much about zucchini until my wife introduced me to zucchini boats and wooooooo boy, things changed.

I love zucchini boats!

Stuff them with almost anything you want and you have yourself a nice little dish.

It’s amazing the creative things that people come up with when it comes to food. I would just grab a zucchini and dip it into a bottle of ranch.

My creativity is limited.

I was used to a certain style of eating.

If I was going to eat porkchops the were just plain porkchops on a plate.

When she told me she was going to make stuffed pork chops I thought she was joking because pork chops were too small to be stuffed.

This is one of those meals that will make you question reality.

You go through life knowing what a cheeseburger is then suddenly life gives you a cheeseburger loaf, that tastes exactly like a cheeseburger, but you eat it with a fork.

You start to question a lot of things in your life after that but that’s just how the game goes I suppose.

I really enjoy the burst of mustard you get with this recipe. I think that’s what puts it over the edge and gives it a cheeseburger flair.
